ANCHOVY WITH TOMATO AND TOAST
After washing some good tomatoes, we dry them and cut them into slices .
We place the toasted bread spread on a tray and put on top of the tomato slices together with the salt flakes to taste (if you want to add them at the end of the recipe, before eating you can do it like this too).
We open a can of good Cantabrian anchovies and place them on top of the tomato slices.
We sprinkle the bread with the tomatoes and anchovies with the oil from the can and add the oregano and finish with a reduction of balsamic vinegar from Modena above all and that’s it! Delicious !!

- Balsamic vinegar reduction of black trufle
